Recipe | Balsamic Brussel Sprouts

This is one of my go to recipes for quick, simple, healthy-ish comfort food, and there’s a reason! Balsamic Brussel Sprouts are delicious and take maybe 30 minutes to make using just one pot and one sheet pan, so it’s perfect for a quick dinner. I like to make it with garlic couscous, but you can use any grain that you’d like.

Quarter the brussel sprouts and place them on a sheet pan like these covered in tin foil. The tin foil isn’t necessary, but it makes serving and clean up much easier.

Next mix 1/4 cup of soy sauce and 1/4 cup of balsamic vinegar. You can add a dash or two of worcestershire sauce if you like, but it can be vegan without it. Then pour it over the quartered brussel sprouts and pop it in the oven at 350º for 20 minutes. Save some sauce for later to use as a drizzle.

After 20 minutes, take it out and add in slivered almonds and golden raisins before putting it back in the oven for another 10 minutes. After that, most of the sauce should be gone. Other good options for extras are parmesan cheese, feta cheese, walnuts, macadamia nuts, crasins, etc. You can also add a protein on top like grilled chicken, pork, or tofu.

After that, plate your couscous, add your veggies, and you’re ready to go! It’s really that easy!

  • 1 cup of a grain – couscous, quinoa, rice, pasta
